1. Malibu Bay Breeze Cocktail
Add ice to a tall glass. Add 3 oz of Coconut Malibu Rum, 4 oz of pineapple juice, and top with 2 oz of cranberry juice. Garnish with lime slice, maraschino cherry, and pineapple chunk. Stir and enjoy!
Customize this boozy drink by swapping out pineapple juice for orange or grapefruit juice. Or try another tropical flavor of rum such as pineapple, mango or passion fruit.
2. Peach Rose Sangria
Add 3 thinly sliced peaches and 1/2 pint of raspberries to a pitcher. Pour 1 bottle of rose wine, 1/4 cup of brandy, and 1 cup of peach juice over the fruit. Stir and refrigerate for at least an hour. Pour the sangria along with some of the fruit into glasses. Top with sparkling water and garnish with a fresh peach slice.
For a more peachy flavor try using peach brandy.
3. Blue Hawaiian
The Blue Hawaiian is a must-have! Only 4 ingredients and the perfect tropical flavorsIn a cocktail shaker add 1-2 oz coconut rum, 1 oz Blue Curacao and 2 oz pineapple juice. Shake to combine and serve over crushed ice. For a fun garnish add pineapple and maraschino cherry skewers.
4. Chambord Vodka Lemonade
This cocktail is the perfect elevation of a vodka lemonade! To start, add ice to a glass. Add 3 oz of your preferred vodka and 1 oz of Chambord Liquor. Top with lemonade, stir and enjoy! Try substituting lemonade for pink or raspberry lemonade. For garnish, add lemon slices and fresh raspberries.

5. Corona Sunrise
Try this spin on a tequila sunrise! Start with a Corona Extra, then dump or drink contents down to the top of the Corona label. Add 1 and a half ounces of tequila, 1 and a half ounces of orange juice, and 1/2 ounce of grenadine. Plug the top of the bottle with your thumb and turn bottle upside down to mix ingredients. I recommend doing this part outside or over the sink!
Then squeeze a lime wedge into the bottle and place in the neck. Serve and enjoy!
Swap orange juice for pineapple juice for a tropical twist!
6. Cranberry Gin and Tonic
Starting by filling a tall glass 3/4 of the way with ice. Add 2 lime slices and 1/4 cup of cranberries. Pour in 1 and a half ounces of chilled gin and 1 and a half ounces of chilled cranberry juice. Top with tonic water. Garnish with lime wedge, cranberries, and rosemary. Serve and enjoy!
For a sweeter cocktail try swapping cranberry juice for cranberry cocktail juice or adding simple syrup.
7. Watermelon Mojito
Bust out the muddler, we’re making mojitos! This may be the most complicated cocktail so far, but no summer menu is complete without the beloved mojito. So lets give it a try!
First, add 2 square chunks of seedless watermelon to the food processor. Then, remove any seeds with fine mesh and set aside.
Muddle watermelon and bottom leaves from a sprig of mint (saving top for garnish). Add crushed ice. Add 1 oz of simple syrup, 1 and a half ounces of white rum, and 1/2 cup of club soda or sparkling water. Garnish with mint leaves and enjoy!
No simple syrup? Try substituting club soda and simple syrup for Sprite Zero.
8. Mango Sunrise Pina Colada
In a cocktail shaker filled halfway with ice add 2 oz coconut rum, 2 oz mango juice and 2 oz of pineapple juice. Shake well to combine.
Pour over ice in cocktail glass. Add 1 tbsp of coconut cream slowly by pouring down the back of a spoon. Add 1 tbsp of grenadine slowly to the top. Garnish with fresh pineapple and enjoy!
9. Frozen Peach Bellini
In a blender add 3 cups of diced fresh or frozen peaches, 1 and a half tbsp of sugar, and 1 cup of ice cubes. If using frozen peaches add less ice. Blend until smooth.
Add 3 cups of wine (Prosecco, Champagne, or other sparkling wine) and pulse until combined.
Divide into glasses and top with a peach slice. Enjoy!
10. Pineapple Jalapeno Smash
In a shaker add 6 chunks of pineapple (about 1 inch thick), 1-2 slices fresh jalapeno, and 1/2 lime juiced and muddle together.
Add 1.5-2 ounces of vodka, 3 ounces of pineapple juice, and ice. Shake to combine.
Pour over ice and add jalapeno or pineapple as garnish. Enjoy!
11. BONUS DRINK: Vanilla Lemon Drop
I’m calling this the bonus drink because I don’t totally remember how to make it, but it was heaven. I’ve searched high and low and can’t find a recipe. From what I remember you simply sub the vodka in a lemon drop for vanilla vodka. So let’s try this!
Use a lemon wedge to rim a martini glass and dip in sugar.
Combine 1 oz of vanilla vodka, 1/2 oz of triple sec, 3/4 oz of fresh lemon juice, and 1/4 oz of simple syrup in a shaker filled with ice. Shake well and strain into martini glass. Garnish with a lemon wheel.
